About me

I have loved to bake since I can remember, and like the rest of the world, started making sourdough during the Pandemic.  Over three years later, I make all our family's bread with a lovingly cared for wild yeast starter - sandwich bread, rustic loaves, English muffins, crackers, muffins, waffles, pancakes… and....bagels!

I'm a born-and-raised Mainer who grew up on Mr. Bagel, then ate her fair share of H&H while living and working in New York City - and you know what? It turns out that my, homemade, handmade, small batch, sourdough (read: healthier!) bagels are better (<gasp>).

There is something special about bagels and how they encourage connection, community and ritual. Toast ‘em (or not), schmere ‘em, share ‘em, gather over ‘em. So, from my home to yours, thank you for being here. Cheers!

Don’t take my word for it…

A former New Yorker

These are the best damn bagels I have ever had, and I consider myself something of a bagel expert.

A local teenager upon trying an early batch

Mom! Tell her you'll pay her for more of these bagels!

A happy neighbor

Ummmm. Did you make these? They are INCREDIBLE!

About Sourdough

(hint! It has some wicked nutritional benefits. Source.)

Digestion

The fermentation process of sourdough bread can lower the amount of non-digestible carbs in the wheat.  This can make the bread easier to digest for people, including those with irritable bowel syndrome and mild gluten sensitivity.

Nutritional Value

Whole-grain breads naturally contain calcium, iron, and zinc. However, bread also contains phytates, which block absorption of these minerals.  Sourdough bread's fermentation process helps break down phytates, so the minerals in the bread are easier for the body to absorb.

Low glycemic Index

Sourdough bread has a lower glycemic index (54) compared to commercial bread (71).  That means sourdough bread does not raise blood sugar levels as rapidly as refined white bread.

Fewer Preservatives

Unlike with commercial bread, sourdough baking reduces the need for preservatives because of the fermentation.

Healthy Bacteria

Sourdough starter naturally contains prebiotic and probiotic bacteria.  Although the probiotics are largely destroyed by the heat when the bread is baked, the prebiotics remain.  These nutrients support your gut health.
